Cinnamon Roll Blondies

These cinnamon roll blondies are a rich, soft-baked treat with a better-for-you twist. Made with creamy cottage cheese, almond butter, and almond flour, they’re packed with protein and wholesome almond goodness, then swirled with warm cinnamon sugar for that classic cinnamon-roll flavor. Think chewy blondie meets gooey cinnamon roll in every bite.
Ingredients:
- 1 cup Cottage Cheese
- 1/2 cup Natural Almond Butter
- 2 Eggs
- 2/3 cup Coconut Sugar
- 1 1/4 cups Almond Flour
- 1 tsp Baking Powder
- 2 tsp Vanilla Extract
- 1/2 tsp Salt
Cinnamon Swirl:
- 2 tbsp Coconut Sugar
- 2 tbsp Melted Salted Butter
- 1 tsp Cinnamon
- Pinch of salt
For the Icing:
- 1/4 cup Powdered Sugar
- Splash of milk
- Splash vanilla
Instructions:
- Preheat oven to 350°F and line an 8×8 baking dish with parchment paper.
- Blend the cottage cheese until completely smooth in a food processor, then combine it in a medium bowl with the almond butter, eggs, coconut sugar and vanilla.
- Add the almond flour, baking powder and salt and mix until just combined. Batter will be slightly lumpy.
- Spread the batter evenly into your prepared pan.
- In a small bowl, mix the coconut sugar, melted butter, cinnamon and salt, and pour it over the batter and use a knife to gently swirl it throughout.
- Bake for 28-30 minutes, or until the edges are set and the center is just slightly soft. Do not over bake. Let cool completely.
- Drizzle the icing over the top, slice and enjoy!
