Banana Protein Muffins

These soft and satisfying banana protein muffins are made with real bananas, creamy vanilla protein, a hint of almond extract, and our rich sage honey for natural sweetness. The almond extract adds a warm bakery-style flavor that pairs perfectly with the sweet banana and delicate floral notes of the honey. Packed with protein and wholesome ingredients, they’re perfect for breakfast, post-workout fuel, or an anytime snack.
Ingredients:
- 3 Large Extra Ripe Bananas; mashed
- 1 Large Egg
- ¼ cup Sage Honey
- 1 tbsp Avocado or Olive Oil
- 1 tsp Almond Extract
- 1 cup All Purpose Flour
- ½ cup Vanilla Protein Powder
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 2 tsp Ground Cinnamon
- ¼ tsp Ground Nutmeg
- 1 tbsp Cornstarch
- ½ cup Semisweet Chocolate Chips
Instructions:
- Preheat oven to 425 degrees F. Prepare muffin pan with paper muffin cups.
- In a medium mixing bowl, combine mashed bananas, egg, honey, avocado oil and almond extract. Stir vigorously until the mixture is smooth.
- In a separate large mixing bowl, combine dry ingredients; flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, cornstarch.
- Combine the dry ingredients to wet ingredients, and mix gently until combined.
- Add in chocolate chips.
- Spoon batter into the prepared muffin tins, filling each one to the top, which should make about 10 muffins.
- Sprinkle additional chocolate chips on the top of each.
- Bake muffins for 5 minutes at 425 degrees F., and then with muffins staying in the oven, reduce heat to 350 degrees F. and bake muffins for an additional 12 minutes.
- Remove from oven and allow muffins to cool in pan for 10 minutes before transferring to a wire rack to cool completely.
