Almond Flour Pancakes

For the mom who made every morning feel special—this one’s for her. Give Mom a stack of love this Mother’s Day with almond flour pancakes made the Stewart & Jasper way!

Ingredients: 

  • 1 cup Almond Flour *
  • 2 Large Eggs
  • 2 tbsp Maple Syrup
  • 2 tbsp Olive Oil
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • ¼ tsp Sea Salt
  • 1 tsp Water (as needed to thin batter)

*All of these products can be purchased at Stewart & Jasper, in-store and online.  

Instructions: 

  1. Preheat skillet over medium-low heat on the stovetop.
  2. As it heats, whisk together all your ingredients into a large bowl.
  3. The batter will be thicker than traditional pancake batter, so use 1 tsp of water to make it slightly thinner, but not too thin.
  4. Grease the preheated skillet with butter and then scoop ¼ cup of batter into the pan.
  5. Make sure your pancakes shape is round and on the smaller side, so they are easier to flip.
  6. Cook on one side until golden brown and carefully flip. Each side takes about 2-3 minutes.
  7. Repeat with the remaining batter.
  8. Recipe makes about 5-6 pancakes.
  9. Serve with maple syrup and berries.
