Almond Croissant Bites

These Almond Croissant Bites are a melt-in-your-mouth treat with all the flavor of a classic croissant, made easier and naturally nutty with almond flour. Each bite has a tender, buttery center and a golden, crisp edge, topped with a generous sprinkle of toasted sliced almonds for that irresistible crunch. Lightly sweetened and finished with a dusting of powdered sugar, they’re the perfect bite-sized pastry for breakfast, brunch, or an afternoon coffee break.
Ingredients:
- 1 sheet Puff Pastry, thawed
- 1 cup Almond Flour
- ½ cup Light Brown Sugar
- ½ cup Salted Butter
- 1 ½ tbsp All Purpose Flour, and additional for rolling the puff pastry
- 1 Large Egg
- 1 tsp Pure Almond Extract
- Pinch of Salt
- ¼ cup Sliced Almonds
- Powdered Sugar for garnish
Instructions:
- Preheat oven to 400 degrees F.
- Using a hand mixer, combine almond flour, brown sugar, flour, butter, flour, egg, almond extract, and a pinch of salt. Do not over mix, set aside.
- On a lightly floured surface, rollout the puff pastry to an 11×11 square. Cut 4×4 inch squares. Gently press each square into the cavity of a muffin pan.
- Using a 1 tablespoon scoop, fill each pastry cup with filling.
- Press a few sliced almonds on top of each.
- Bake for 10-12 minutes, until the pastry is golden brown.
- Remove the pastries from the pan onto a wire rack, and dust with powdered sugar.
