Balsamic Almond Green Beans
A side dish guaranteed to please!
Ingredients:
1 lb. green beans, cleaned and edges trimmed
½ medium yellow onion, thinly sliced
1 tbsp. olive oil
4 tbsp. balsamic glaze
1 tbsp. Dijon mustard
½ tsp. salt
¼ cup dried cranberries
¼ cup Stewart & Jasper Natural Sliced Almonds
4-6 oz. Crumbled goat cheese
Instructions:
1. Bring a large pot of water to a boil. Add the green beans and cook the green beans until crisp-tender, which takes about 5 minutes. When the beans are cooked, drain immediately and rinse under cold water until they are no longer hot.
2. Combine the balsamic glaze and Dijon mustard in a small bowl and whisk together.
3. In a large wok or pan, sauté the yellow onion in the olive oil for 5 minutes or until the onions have softened. Add salt and stir.
4. Add the balsamic glaze mixture and dried cranberries and cook for about a minute. Add the green beans and gently toss them in the wok to coat them with the balsamic glaze. Once combined, remove from heat.
5. Serve on a platter and top with sliced almonds and crumbled goat cheese.
