Apricot Blondies

These blonde fruit brownies are a nice change of pace from traditional chocolate ones. Studded with delicious gems of dried apricots and layers of sweet white chocolate chips. This is the perfect dessert for any apricot lover. Be sure to give it a try!

Ingredients:

  • 4 ounces white baking chocolate chips
  • 1/3 cup salted butter
  • ½ cup packed brown sugar
  • 2 large eggs, beaten
  • ¼ tsp vanilla
  • ¾ cup all-purpose flour (gluten-free optional)
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¾ cup S&J Dried Apricots, finely chopped
  • ¼ cup sweetened shredded coconut

Instructions:

  1. Preheat the oven to 350 degrees F.
  2. Melt chocolate and butter over low heat and constantly stir in a saucepan.
  3. Once melted, remove from heat; stir in brown sugar, eggs, and vanilla until combined.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Stir in the chocolate mixture.
  6. Combine all shredded coconut and half of the dried apricots into the batter.
  7. Pour into a greased 9-inch baking pan.
  8. Sprinkle the remaining dried apricots on top.
  9. Bake for 25 minutes or until golden brown.
  10. Cool, cut into bars, and enjoy!
