Vanilla Almond Butter Cookies

Ingredients: 

  • 1 cup butter or margarine  
  • ¾ cup light brown sugar 
  • ½ cup white sugar 
  • 2 eggs 
  • ½ cup S&J Vanilla Almond Butter 
  • 1 tsp almond extract 
  • 2 ½ cups all-purpose flour (for a gluten free option: use 2 ½ cups gluten free all-purpose flour and ½ tsp xanthum gum) 
  • 1 tsp baking soda 
  • ½ tsp salt  

Topping: 

  • Powdered sugar 
  • S&J Natural Sliced Almonds    

Instructions: 

  1. Mix butter, brown sugar, sugar and whip until fluffy. 
  1. Add eggs, almond extract, S&J Vanilla Almond Butter, and whip again. 
  1. In a separate bowl, mix together flour, baking soda and salt. 
  1. Add the flour mixture to the wet ingredients. 
  1. Chill dough for 30 minutes. 
  1. While dough is chilling, preheat oven to 350 degrees F.  
  1. Once dough is chilled, drop a teaspoon full of dough on a cookie sheet. 
  1. Bake for 10 minutes. 
  1. Once semi-cooled, sprinkle with powdered sugar and S&J Natural Sliced Almonds.  

Yields 42 cookies.
