Vanilla Almond Butter Cookies
Ingredients:
- 1 cup butter or margarine
- ¾ cup light brown sugar
- ½ cup white sugar
- 2 eggs
- ½ cup S&J Vanilla Almond Butter
- 1 tsp almond extract
- 2 ½ cups all-purpose flour (for a gluten free option: use 2 ½ cups gluten free all-purpose flour and ½ tsp xanthum gum)
- 1 tsp baking soda
- ½ tsp salt
Topping:
- Powdered sugar
- S&J Natural Sliced Almonds
Instructions:
- Mix butter, brown sugar, sugar and whip until fluffy.
- Add eggs, almond extract, S&J Vanilla Almond Butter, and whip again.
- In a separate bowl, mix together flour, baking soda and salt.
- Add the flour mixture to the wet ingredients.
- Chill dough for 30 minutes.
- While dough is chilling, preheat oven to 350 degrees F.
- Once dough is chilled, drop a teaspoon full of dough on a cookie sheet.
- Bake for 10 minutes.
- Once semi-cooled, sprinkle with powdered sugar and S&J Natural Sliced Almonds.
Yields 42 cookies.
